FREEZING EXTRA BUTTERMILK

How many times have you bought a quart of buttermilk, used half of it and the remainder went bad in the back of the fridge?  Me  too, but not anymore, since I found out how well it freezes !!!

The trick is to freeze buttermilk in very small quantities (so it thaws quickly).

With a little "testing" I discovered that the "wells" in my ice cube trays hold 2 tablespoons each. That means 8 frozen buttermilk cubes equal a cup of buttermilk ........ it doesn't get much easier than that!!

Keep in mind that ice cube trays are not a standard size, so measure out ONE CUP of buttermilk and pour it into your ice cube trays.

Once frozen, put the cubes in freezer bags and clearly mark them

The buttermilk cubes thaw out overnight in the fridge, or if you need them sooner than that, you can microwave them for just a few seconds.

DON'T FREAK OUT TIP:
Sometimes, the thawed out buttermilk looks like it's separated (not pretty), don't freak out. Just whisk it for a few seconds then use it.

16 Tablespoons = 1 cup
12 Tablespoons = 3/4 cup
8 Tablespoons = 1/2  cup
5 Tablespoons + 1 Teaspoon = 1/3  cup
4 Tablespoons = 1/4  cup
