Hotel Tiffin Sambar
Who said Sambar doesn't taste good if onions are not added? Here is the simplest recipe of the Hotel style Sambar for Idli, Dosa, Pongal and Upma varieties made without Onions. This tasty Tiffin Sambar doent need even sambar powder!!

Ingredients for making Hotel Tiffin Sambar:
- Chopped carrots and beans hand ful
- Slitted green chillies 2
- Chopped tomatoes 2
- Thin extract of tamarind juice from a Gooseberry size 300 ml
- Water 3 cups
- Moong dal 4 table spoons
- Besan flour 2 tb spoons
- Turmeric powder 1/4 tspn
- Red chilli powder 3/4 teaspoon
- Coriander seed powder 1 full tablespoon
- Asafoetida powder 1/4 tspn
- Salt to taste
- Coriander leaves for garnishing
- Oil 3 teaspoons
For tempering:
- Mustard seeds, Cumin seeds & Curry Leaves
- Oil 3 teaspoons
How to make Hotel Tiffin Sambar?
Heat a pressure cooker or pressure pan with 2 teaspoons of oil.
Fry the veggies, chillies and tomatoes till the tomatoes become soft.
Add all the powders and salt mentioned.
Pour in the tamarind juice and water.
Add the dal.
Mix well and pressure cook to six whistles.
Once the steam is released, again switch on the stove.
Mix besan flour in half cup of water and add to the boiling sambar.
Allow to boil for two more mins and switch off.
Do the seasoning and do it.
garnish with coriander leaves.
