Tasty & Crispy Uthappam
Uttapam is nothing but dosa made with different toppings. Onion and Tomato uttapam ranks first in Uttapam varieties. An ordinary dosa can be made rich, spicy,healthy and colourful by making small twists on the toppings made and in the shape of the Uttapam to make the kids to eat them. With the same dosa batter you can make different types of uttapam and surprise your guests with less efforts!!!
Grease it with little oil.
Sprinkle few drops of water to see whether the tawa is hot enough. If you get good sound it is hot enough.
Pour 2 ladles of batter on the tawa and spread it gently around the tawa.
The Dosa need not be thin.If you are using tomato puree pour 2 tea spoons of puree on the dosa and spread gently (or) sprinkle the onions, tomatoes and coriander leaves on the Dosa.
Also sprinkle some pepper powder.
With the Dosa making spatula gently press the toppings to make them to settle down well on the batter.
Drizzle some oil on and around the dosa.
Wait for 1 minute.
Gently flip off the dosa and give a gentle press and again drizzle some oil.
Let the veggies get well roasted for 2 minutes.
Now you transfer this on a plate.
Cut the dosa into quarters with a Pizza cutter or sharp knife.
Serve hot with any side dish like chutney or sambar.
This dosa does not need side dish since it tastes yummy to have plain.
Before spreading the vegetables you can also spread a tea spoon of any mint or coriander chutney on the dosa and sprinkle the veggies to make it spicy.
Note:
Through out the cooking the flame must be in medium to get crispy dosa.
Since the veggies are topped it needs more time to get roasted than the regular dosa to get crispy.
Uttapams can be made with any type of dosa batter you have in hand.

Ingredients for making Tasty & Crispy Uttapam :
- Regular Dosa batter fermented one 1 large bowl
- Very finely and thinly chopped onions, and green coriander leaves 1 cup each
- Tomato puree 2 tb spoons (or) Finely chopped tomatoes
- Pepper powder mixed with a pinch of salt 1 tb spoon
- Oil for making Dosa
